Post Thanksgiving Roll Call

Calling all Losers! (Weight loss losers, of course):

Time to fess up on how you did over Thanksgiving....

I am afraid I had too much pie twice, but I am going to swim tomorrow.

I ate pretty well, measured my runs this weekend not in miles but in pieces of pie (3 miles = approx. 1 slice of buttermilk pie) and only exceeded my allotted count by 1 piece.

I guess we'll see the final damage totals later this week when I try to squeeze into my clothes!

Buttermilk pie? You've never had it? (It may be a southern thing). Buttermilk pie is a little slice of custardy heaven wrapped in a pie crust.

Basically it's 1 c. buttermilk, 1.5 c. sugar, 1.5 Tbsp flour, 3 egg yolks, 1 tsp vanilla, 1/3 c. softened butter and a splash of almond extract completely mixed together; three egg whites beaten until stiff then folded into the mixture right before it goes into the oven; poured into an unbaked pastry crust and baked at 425F for 10 minutes and then turned down to 350F for another 35 minutes before being taken out to cool.

You should really try it sometime when you are feeling both festive and like you've earned a treat. It may be full of sugar and fat, but it sure can be worth what it takes to work it off!

Wow! I have had venison, okra, hominy and all other sorts of things, but never Buttermilk pie. It sounds amazing! Thanks! :-)
